Ayurvedic Recipe : Vegetable Stew
Ingredients:
2 tablespoons ghee (clarified butter)
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1 teaspoon turmeric powder
1 teaspoon grated fresh ginger
2 garlic cloves, minced
1 medium onion, chopped
2 carrots, diced
2 celery stalks, diced
1 small sweet potato, diced
1 zucchini, diced
1 cup chopped spinach
4 cups vegetable broth
1 cup cooked chickpeas
Salt to taste
Yoghurt topping
Freshly ground black pepper to taste
Fresh cilantro leaves for garnish
Instructions:
In a large pot, melt ghee over medium heat.
Add cumin seeds and coriander seeds and sauté until fragrant, for about 1 minute.
Stir in turmeric powder, grated ginger, and minced garlic. Cook for another minute.
Add chopped onion and sauté until it becomes translucent.
Add diced carrots, celery, sweet potato, and zucchini to the pot. Stir well to coat the vegetables with the spices.
Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer for about 15 minutes or until the vegetables are tender.
Add cooked chickpeas to the stew and cook for an additional 5 minutes.
Season with salt and freshly ground black pepper according to your taste.
Just before serving, stir in the chopped spinach and cook until wilted, for about 2 minutes.
Remove the pot from heat and let the stew rest for a few minutes.
Ladle the Ayurvedic Healing Vegetable Stew into bowls and garnish with fresh cilantro leaves.
Serve hot and enjoy the nourishing benefits.
